What surprises me constantly in the cottage bakery business I have, is the conception that baked goods are a “treat” an “indulgence” a “guilty pleasure”.
No it’s not, it’s food, or at least it should be.
The baked goods I make, are simple breads, sweet breads such as brioche made into rolls, and various cookies (because people want them).
I don’t make sugary indulgences, such as cakes, cupcakes or use corn syrup and transfats, simply because I neither like them, nor believe in them. They’re a tragic waste of gut space. I personally do not eat them because they are the most unreal, manufactured product there is. The level of fake colors, flavors, and chemicals that go into these things is truly unbelievable. Just hand me a pound of poison and kill me now.
Luckily for me, I happen to love fruits, especially stone fruits and berries which were such a treat when they came into season, and watching the trees bearing ripening fruit. Raspberries were my absolute favorite, the pain and consequences of the protective thorns added to their allure. A bowl full of berries picked by someone else lacked the excitement of risking life and limb for that perfect berry just beyond my reach.
Unfortunately, most people today don’t experience seasonal fruit trees or bushes and have no memories of looking forward to seasons. Everything is readily available in the grocery store, in various stages and unripeness or decay. This to me is one colossal tragedies of our time.
Back to baking.
From a fully plant-based diet perspective, bakery goods for me are an opportunity to pack as much nutrition and goodness into a hand held product, (that’s also easily transportable) as possible.
To eat well, or veganly, while working or traveling is difficult, well, let’s just say, near impossible. It’s unfeasible for shop keepers to keep fresh, delicate, and unstable foods available without a complete revamping of food service in all major sectors.
Now that I am 100% completely plant-based in my own lifestyle, I have decided to focus on developing baked goods that are high in nutrition, plant proteins, anthocyanins, nuts and seeds, while providing a product that’s easily packed to go.
I’m so excited about all that I am about to create, that will benefit both myself and all those who choose this way of life.
